This Mediterranean Chickpea & Yogurt Bowl is a refreshing and nutritious dish packed with vibrant flavors and wholesome ingredients. With crispy roasted chickpeas, creamy yogurt, fresh vegetables, and warm flatbread, this dish makes for a perfect light lunch or a satisfying snack.

Ingredients

 

For the Roasted Chickpeas:

• 1 cup canned chickpeas (drained and rinsed)

• 1 tbsp olive oil

• ½ tsp cumin

• ½ tsp paprika

• ½ tsp garlic powder

• Salt and pepper to taste

For the Yogurt Base:

• 1 cup Greek yogurt or plain yogurt

• ½ tsp lemon zest

• 1 tbsp lemon juice

• 1 tbsp olive oil

• Salt and black pepper to taste

For the Toppings:

• ½ cup diced cucumbers

• ½ cup diced tomatoes

• ¼ cup green olives

• ¼ cup cooked edamame or green peas

• ¼ cup fresh arugula or spinach

• 2 fresh figs (sliced)

• 1 tbsp chopped fresh herbs (parsley or mint)

• 1 piece of flatbread or pita (lightly toasted)

Instructions

 

Step 1: Roast the Chickpeas

1. Preheat the oven to 400°F (200°C).

2. Toss the chickpeas with olive oil, cumin, paprika, garlic powder, salt, and pepper.

3. Spread them evenly on a baking sheet and roast for 20-25 minutes, shaking the pan halfway through, until crispy.

 

Step 2: Prepare the Yogurt Base

1. In a bowl, mix Greek yogurt with lemon zest, lemon juice, olive oil, salt, and black pepper.

2. Stir well and spread the yogurt evenly in a serving bowl.

 

Step 3: Assemble the Bowl

1. Arrange the roasted chickpeas on top of the yogurt.

2. Add cucumbers, tomatoes, olives, edamame, arugula, and figs.

3. Sprinkle with fresh herbs for added flavor.

4. Serve with warm flatbread or pita on the side.
