Sweet and Sour Chicken

Ingredients:
For the Chicken:
• 2 boneless, skinless chicken breasts, cut into bite-sized pieces
• ½ cup cornstarch
• 1 egg, beaten
• ½ cup all-purpose flour
• ½ teaspoon salt
• ½ teaspoon black pepper
• ½ teaspoon garlic powder
• ½ cup vegetable oil (for frying)
For the Sauce:
• ½ cup ketchup
• ⅓ cup rice vinegar (or white vinegar)
• ¼ cup brown sugar
• 1 tablespoon soy sauce
• 1 teaspoon sesame oil
• 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
For the Stir-Fry:
• 1 red bell pepper, cut into chunks
• 1 green bell pepper, cut into chunks
• 1 yellow bell pepper, cut into chunks
• 1 small onion, sliced
• 1 cup pineapple chunks (optional)
• 1 tablespoon sesame seeds (for garnish)
• 2 tablespoons chopped green onions (for garnish)
Instructions:
Step 1: Prepare the Chicken
1. In a bowl, season the chicken with salt, pepper, and garlic powder.
2. Dip each piece into cornstarch, then into the beaten egg, and finally coat with flour.
3. Heat vegetable oil in a pan over medium-high heat. Fry the chicken pieces until golden brown and crispy (about 4-5 minutes per side). Remove and drain on paper towels.
Step 2: Make the Sweet and Sour Sauce
1. In a small saucepan, mix ketchup, vinegar, brown sugar, soy sauce, and sesame oil over medium heat.
2. Once it starts to simmer, stir in the cornstarch slurry and cook until the sauce thickens (about 2 minutes).
Step 3: Stir-Fry the Vegetables
1. In a large pan or wok, heat 1 tablespoon of oil over medium heat.
2. Add onions, bell peppers, and pineapple chunks (if using), and stir-fry for 2-3 minutes until slightly softened.
Step 4: Combine Everything
1. Add the crispy chicken pieces to the pan with vegetables.
2. Pour the sweet and sour sauce over everything and toss well to coat evenly.
Step 5: Serve & Garnish
1. Transfer to a serving plate and sprinkle with sesame seeds and chopped green onions.
2. Serve hot with steamed rice or noodles.
